Restaurateur Billy Dec brings new Asian dining concept Sunda to Fulton

Celebrity restaurateur Billy Dec officially opened the second iteration of his wildly popular Asian fusion dining concept Sunda in Chicago’s Fulton Market on February 26. The opening marks 15 years since Dec debuted the original iteration of Sunda in River North.

For Dec, Sunda is a deeply personal endeavor, a reflection of his Filipino heritage, and a testament to his own experiences traveling through Southeast Asia. The restaurant combines flavors of the Philippines, Thailand, Vietnam, and China for an unforgettable culinary experience.

Sunda Fulton Market, led by head chef Mike Morales, features elevated takes on classic Asian dishes including creative sushi rolls, unrivaled dim sum, delectable noodle and rice dishes, and fresh salads. Complementing each meal is a wide array of craft cocktails, premium sakes, Asian beers, Japanese whiskies, and a robust wine selection.

Sunda partnered with local creative house Studio K, led by acclaimed hospitality designer Karen Herold, for the design of the new Fulton Market location. Studio K has collaborated with other notable culinary names like Maple and Ash and the Nobu Hotel to create unforgettable floor designs and unparalleled dining ambiance.

The space melds warm neutral tones with rich textures, complemented by clean lines and a dramatic bamboo veil. The atmosphere embraces the West Loop’s historic look, combining urban grit with the modern Asian flair that has cemented Sunda as a culinary powerhouse in Chicago.
