Portillos, the classic Chicagoland restaurant chain, is expanding on a national scale with plans to open at least 920 restaurants over the next 20 years. According to Crain's Chicago Business, this marks the first time the Oak Brook-based company has updated its expansion goals since going public in 2021.
Portillo's has set its sights on establishing additional locations in Arizona, Florida, and Texas, as reported by NBC 5 Chicago. Of the planned 920 locations, 800 are projected to be full-scale restaurants, while 120 will be pick up, walk-up, or drive-thru locations with no designated dining area.
The company also plans to open outlets in Atlanta, Georgia; Denver, Colorado; and Las Vegas, Nevada—all locations with high demand based on online "Shop and Ship" order data. As part of the expansion process, Portillo's plans to retrofit around 40 existing restaurants this year and next, incorporating modern features like self-serve kiosks and self-service beverage options.
The company will introduce a smaller footprint and shorter production line in its new store designs to achieve faster customer service, ultimately boosting sales.
In addition to the current expansion plans, Portillo’s President, Michael Osanloo, told investors earlier this year that the company is interested in exploring real estate in airports and other unconventional locations for Portillo's restaurants.
