Israel Idonije and Stephen Gillanders tackle Chicago with 'The Staley'

Former Chicago Bear Israel Idonije and acclaimed chef Stephen Gillanders teamed up again to bring Chicago “The Staley,” a high-energy neighborhood sports bar set that opened January 27. Building on the success of their fine dining spot, Signature, which debuted last year, The Staley delivers a more casual, approachable experience while retaining the same dedication to quality and innovation.

Designed to accommodate up to 400 guests, The Staley has a vibrant atmosphere where sports fans and food enthusiasts can come together. The bar offers tailgate-style parties, a wide selection of craft cocktails, and elevated pub fare—all in the heart of Chicago’s South Loop. With large screens throughout the space, patrons won’t miss a moment of the city’s sports action.

“The Staley is about celebrating community, sports, and great food,” said Idonije. “Whether you’re here for the big game or a relaxed night out, we’ve created a space where everyone feels welcome. Our drink menu features draft beer, draft cocktails, and classic Chicago-inspired beverages, including our signature hard seltzer—Bears Claw.”

Chef Gillanders brings his culinary expertise to reinvent traditional sports bar fare with bold and creative twists. The bar’s name, “The Staley,” pays homage to Chicago’s storied football history. Staley was the original name of the Chicago Bears franchise- The Decatur Staleys. It reflects Idonije’s passion for sports and the city, making it a fitting tribute to the camaraderie and pride of being a Chicagoan.

The Staley is not Idonije’s first foray into the sports bar scene. In 2023, he launched Signature Bar + Restaurant, a sleek bar located at 1312 S. Wabash in Chicago's South Loop. Signature has become known for its stylish ambiance, contemporary cuisine and curated cocktails, catering to a sophisticated crowd while still capturing the excitement of game day. Together, Signature and The Staley showcase Idonije’s vision for creating dynamic spaces that bring people together.
